CAFE CUISINE

Café Cuisine is a semester long elective subject in year 10. Café Cuisine explores some topics explored in VCE and lends itself towards further studies of VCAL and VET Hospitality. Students explore the topics of Safety and Hygiene with regards to commercial operations in the Food Industry. Students study and experience the concepts required to run a small business. They receive the opportunity to achieve their Food Handlers Certificate and acquire a Dromana Secondary College based barrister Certificate. The students work in small groups to set up and run a small café that catered for staff members at the school. They are required to hygienically and consistently prepare food, prepare a variety of beverages offered in a café, serve customers and deal with money. To achieve a satisfactory in this elective students completed one Graded Assessment Task for the semester based on the intricacies of running a small business, demonstrated their ability to work as a team in a real life café situation, completed their Food Handlers Certificate, demonstrated that they were aware of and capable of producing a variety of beverages, and completed an exam that displayed their knowledge of the topics explored.
